Not even 5 minutes; I'd only had time to kill 3 shadows before he started rattling his chains at me. I'm guessing it was because it was a weird floor (increased number of enemies and they were all Treasure Hands; didn't see a single normal shadow).

I'd actually go against that.
Knights had better armor and better black smiths.
The katana is a very inferior blade in comparison to a European Short sword, long sword or claymore. They weighed way too much and were way too brittle.
Their style of fighting alone would put knights on top. The reason many first think of the Samurai is because much of the Japanese martial arts has been preserved over the centuries where as the European styles have largely been forgotten/cast aside in the face of more modern combat.

good point, the preservation. I still think a skilled samurai versus a skilled knight could use their speed to their advantage though. The knight is very slow, most likely wouldn't be able to keep up
The knight would probably just pant them selves and turn in place if they were patient minimizing the difference in speed. I'm unsure about how aggressive the actual Samurai styles were though so it could end up a stand off. If the Samurai didn't cripple the knight in a single strike it could be over though. If the knight had a claymore rather than sword and shield there is enough length on them to parry while striking their opponent's neck.

Melee vs Melee head to Head clash - European Knight by far.

Pike vs Spear - I'd say Samurai

Melee Combat - Samurai

Horse Combat - I'd say Samurai again just for being more nimble.

Keep in mind Plate armor is very VERY heavy. A full suit of knight plate runs easy 80lbs and restricts your movements greatly.
