Really though, if you were to NAPIT a NES RPG game and get donor cartridges to support the game, I would so jump on it.
To repo a NES game that actually would play on a NES would be fun with changed graphics and names in the game even if it was just a rework of FF game. LOL.

But this is the first time I've done any kind of coding (barring spellcast) since freshmen year, which was just 1 trimester of Computer Science.

NAPIT or Xchar let's you open NES 8-bit games to bitmap or other formats and let you change a game from the inside.
Since most NES games ranged from 6 different type of boards and chipsets for NES, you could get a donor game from people that would work with say the original Final Fantasy game but not actually use the original cartridge.
To get a Final Fantasy III game for NES, you had to get a Super Mario Brothers 2 cartridge, a certain one with all the tabs on the cartridge and no missing pins and that setup would run a NES FF III rom.
So convert a FF game to a FFXIAH game with new names, change the graphics, get donor carts from people, make a label and you can have a working ROM or the actual game 8-bit style.
