Plantains start green and when ripen they are yellow. you can cook them when they are green but they don't have a sweet taste, the yellow gets super sweet than a normal banana
Plantains are much more firmer and not as sweet. you cook them

Bananas? well, not banana's, close to that branch though. they can be eaten both green or yellow, when they come out of the tree they are green and as they mature they turn sweeter in flavor and the outside skin starts turning yellow till they rot to black. and no, you can't eat them raw lol you need to cook them.
