What's with the thunder/iota rings in all those builds listed; that garbage sucks, like really bad and stuff.

Well rather, I guess they're acceptable, but why use one of those when you should be using Toreador's (aka Woodsman Ring) and Flame ring situationally (use +ACC ring fulltime if you're lazy to a degree).

OH HEY, I just noticed I'm contradicting my own point by using Pixie Earring over my Bushinomimi (aka the free Triumph Earring), brb swapping that up.

Not saying that's the best build period, because if you're fighting weaker stuff (EP-EM), you could definately swap out, say, Cuch. Mantle for Cerberus Mantle +1 (aka Forager's Mantle/Amemet Mantle +1), as well as the above-mentioned Flame Ring(s), amongst other things (Haubergeon +1 to Byrnie +1 anyone?! <_>) but seeing how the only real thing I(or anyone for that matter I'd imagine) crack out NIN for these days is like um... T-IT range stuff, to full evasion tank whatever it is... I just fulltime the ACC.

That, and who gives a damn about e-peen numbers on stupid stuff like Robber Crabs.

Personally, I use rutters for day jin and af2 for night jin. Af+1 hands for both times. Shura Kabuto is pretty easy to get from sky and probably the best jin piece. I also main Senji and off Perdu. Not sure how that parses compared to the weapons that I see you guys listing. It's very nice katana though.

For most mobs that NIN can do good melee damage on, sure.

It's possible to build for Evisceration if you're meriting on birds or something, but unless you already have a Blau, dagger merits, etc, then it's probably a bit more effort than a single merit camp warrants.

You can also try to build for Kamu or something for mobs where Jin really doesn't work, but most of the time, Jin is gonna be it.

Since everyone else was doing it, here's my NIN WS builds for day and night

I have full Katana merits, which are nice if you can accommodate them with other job's merits, since you'll still have room for more ACC with merits + sushi using a speed based build.
You're not going to turn around and be able to use meat, no, but you'll benefit from 'em regardless.

In nearly all situtations Jin will be your best option. However, Kamu can be useful when you are doing anything that evasion is important (IE duoing Charby or something). Kamu may also be good on very evasive mobs that you are have trouble landing Jin on or very high def mobs that again Jin isn't doing well. If you are using Kamu however, don't use your Jin build plz.
