Unless someone else has already pinned down the monster's stats for you, the way you tell is by parsing your evade rate and increasing your evasion gear until you hit 80% evade. You probably don't need much against EPs.
On DNC against DC mobs in Valk, I parsed 71% (cap is 80%) recently while wearing 0 evasion gear (had Agi+32 though).
On evasive jobs, you shouldn't really need anything against EP.
