How is he real now? Phoenix-downs? Please explain to me how the Fayth could only make dreamstuff for all of X then suddenly make realstuff.

Never properly explained (or I've forgotten). Badly written != not canon, or we'd have a lot of trouble with many games...

He's sealed evil in a can.

I think that makes him... a super secret boss. When the extra post-game dungeon wasn't enough, you bring out this guy.

Frieza was so the last boss though. He had all those multiple forms with one looking like it'd fit perfectly in Dragon Quest . Plus Vegeta was the loner rival character that joined the party at the last second, making it the best arc.

I do agree, I loved the frieza saga even though the VA's randomly changed half way through it.

I didn't like the whole Bulma filler that lasted 240+ episodes though.

Also, the Dragon Ball movies are side-quests. They were DLC bonus chapters except the characters couldn't keep the items and experience they got while in said chapter.
