I don't think I would mind rerolling.. if it wasn't for my gil and craft levels.. how easy is it to level crafting these days?
Well rested bonus and stuff has made the low levels a joke. I don't have any crafts above 20, though, so I dunno about that. :x
It's fairly easy... you can get anywhere between 1-3k exp per synth depending on the abilities you have access to, I've seen over 4k with rested bonus and if you farm company seals you can get consumables that boost your exp by 50% for an ammount of exp

Hmmm.. now to pick a server to go to. I think it would be easier to reroll and relearn the game instead of trying to pick everything up in my current state.

Theres better things to spend your seals on tbh... the weapons and armor you can get with them at the top rank are some of the best in the game and you spend seals to rank up. The best use of them is when you only have crappy or expensive recipies to grind (unless you just do leves). You need to do caravan escort to get them at a decent rate too, only other reliable way is farming Totorak and trading the gear in which can be time and/or anima consuming.
You can do the first 7 or 8 quests for all 3 companys (which reward seals you can spend on items) before you have to decide if you want to join or not to progress so you could just do them and burn off the seals of the 2 you don't want on pages if you felt like craft spamming.

Is there any difference between the gear for each company?
Yeh there is different gear for each company, I think it's spread out though so you can't really say whms go here brds go here kinda think... Havn't rally reserched what other companys get too much.
Edit: I'd say come to Durandal but idk you play times so no idea if I'd actually see you... I know I dicked around a bit on Sarg but didn't see any one XD Iro would be all over you to come here though.

This site has all the gear listed and organized fairly well, although for some reason it's not loading for me atm... click shops > the GC for a list of the gear avalible to each I think. Like I said there are nice peices for each job/class in ever one.
