I'd probably cook the bacon in the oven before even attempting it. Cook it at 350-450 until about 3 min before you'd normally take it out. Just slightly wobbly, just enough to wrap the bacon around what you're trying to wrap.
Lower the temperature the better probably, less chance to burn/overcook the bacon creating hard spots, and more of the fat can cook out. I cook bacon in the oven over a wire rack like this:
This way the grease can drop down onto the foil while the bacon has a chance to release as much fat as possible before taking it out.
So like I said, about 3 minutes before it normally would be done, just enough to bend (oven bacon when cooked right doesn't really bend, and isn't even close to being burnt / dried out).
Then I'd quickly wrap the bacon around whatever I'm wrapping, in this case it would be a grilled cheese lol..., and then finish it off in a cast iron skillet until crispy.
The key to it would be to cook out as much fat as possible, while the bacon is still flexible, so cooking it at a low temp.
It would take longer, but it would be a lot less greasy.
but again, bacon wrapped things aren't my thing :P!
