I can't really say when the last time I cut myself with a knife was.. I'm kinda to the point now that I don't ever notice I've cut myself.. I only notice because either I start bleeding, or if I'm working with citrus or something, I'll feel a stinging and like "wth is going on" look, and see that I nicked myself.
When I first actually seriously got into cooking, for a few years, I cut myself like every time, or every other time. I guess with practice you just get more comfortable doing it, and you don't have to try and not cut yourself anymore.
Also, cannot stand dull blades.. I won't use them. I'd rather use a sharp paring knife than a dull butcher knife.. Even if I'm going to be doing a whole lot of cutting.
