I thought 'girlfriend' when I read "GF". I usually soak it in salt water overnight, my problem is finding the right marinade. A friend sent me the recipe he uses, I just have to get the stuff to make it.

It's hard to find seafood that doesn't have a little bit of mercury. I was advised when I was younger to not eat fish more than three times a week on a regular basis because of it.

Illinois for catfish have been found to carry diseases and traces of mercury. To me, wild catfish is like eating an Asian Carp, just can't do it.
IL catfish are awesome, you hush your *** mouth. There's a reserve of sorts back home called Site M, tons of lakes and small ponds, most man-made, they are very closely watched for any sort of pollution by the state and county. I can see there being pollution like that in other areas that aren't maintained by the state, but where my family and friends always fish, it's legit. Definitely wouldn't swim there, though, lots of snapping turtles lol

Chicken is better. If by some magic reason I go somewhere and there's no chicken left,my next thing to pick would likely be duck. Although since this year started,I'm getting into steak more,so idk,maybe its changed!

Aye most seafood has a decent portion of mercury in it, stuff like shark and tilefish being among the worst. Pregnant woman are advised to stay far away from a LOT of it. Good news for me is that shrimp are juuust fiiine. Tuna has a small amount, but enough that you really have to limit your intake of it, which is shitty because it's an uh-mazing source for omega-3s and stuff for the babies and uber tasty.

I'll give you an example using my town. Not including fastfood places,we have 4 chinese,1 thai,1 thai/chinese and idk if the 1 italian place is even still open any more. Hell for that matter,I think the thai place got closed down and made into a nightclub,and the thai/chinese place might even closed down.

There's an Asian store nearby that sells all kinds of spices and imported stuff so it's easy to make good food yourself

Its the closest thing we have to a "fancy resturant". Is still a dive,but no its more than a pizza place lol.The pizza places here dont even try to be italian at all. Ire'and's #1 pizza place is irish that try to be american @_@

Only good asian food store places that I know of are all like 1+ hour away :(

Their whole style is native american. Its called "apache" they make cowboy and indian jokes,their pizzas have all indian related names. The ones you can actually sit down and eat in are all indian themed,etc

Same! The grocery store chain we use has an Asian section but it's barely more than ramen noodles, soy sauce and cans of water chestnuts. It's seriously pathetic.
