The developers left in secrets for players who aren't strong enough or good enough to complete the content.
Look at Drake Sword, or even Gwyn. He is the only boss in the game that you can parry, and if you decide to do it, he is pathetic.
They give you a way out of almost everything in case you can't do it and you want to give up, because they don't want players to stop playing because it's too difficult.
