And Shepherd's Pie! I suppose it's just mashed potatoes on top of other yummies. But still, it's a dang tasty potato dish, so it counts!
Don't know how you make it but the way I always had it was basically a huge pot pie with mash potatos for the crust. Which is indeed yummy and now is making me hungry. Blah I need to start cooking more again
Try this recipe, I make it sometimes and it rocks my socks:
Skillet Shepherd's Pie:
1 pound ground beef
1 cup chopped onion
2 cups frozen corn, thawed
2 cups frozen peas, thawed
2 Tbls ketchup
1 Tbls Worcestershire sauce
2 Tbls minced garlic
1 teaspoon beef bouillon granules
1/2 cup boiling water
1 Tbls cornstarch
1/2 cup sour cream
3 1/2 cups mashed potatoes (prepared with milk and butter)
3/4 cup shredded cheddar cheese
In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Drain (if necessary.) Stir in the corn, peas, ketchup, W. sauce, and garlic. Reduce heat, cover and simmer for ~5 minutes.
Meanwhile, in a small bowl, dissolve the bouillon in boiling water. Combine cornstarch and sour cream until smooth, stir into beef mixture. Add bouillon. Spread mashed potatoes over the top, sprinkle with cheese. Cover and cook until potatoes are heated through and cheese is melted.
I swear to you, it's gosh-dang delicious!
