You only need nine walnut logs because the recipe yields four smoked salmon. You also only need nine salmon, nine salt, and nine fire crystals. You can log and fish and do this recipe for less than 3k total gil on most servers, but they might not be efficient time-wise.
If you're going to use these for Guild Points it is actually far cheaper to just buy the Smoked Salmon directly from the Guild Vendors rather than craft them yourself. The price of Walnut Logs far exceed the amount of direct purchase of the Smoked Salmon.
