Well Rikirocket, the simple truth is that the AH is a supply demand market. If people don't want it, the price drops. Since Mimas pops quickly and has decent drop rates, the value plummets. The vendors appear to have a mostly standard value based almost entirely on level of gear and rarely changes based on quality of the piece. Though, it is a nice axe, if you can use it.
